I like baking and sharing my goods because cupcakes seem to make people really happy! Well, since I'm experimenting all the time with new flavors, I give cupcakes away on a regular basis - therefore, I have happy friends. One of the best things that I have heard from people is that I have "ruined them". I have been told that the thought of having a store bought cupcake just repulses them and that my cupcakes are so amazing - I love that! Who knew that I could bake (I sure didn't), let alone create new recipes that are good!
So the 2nd batch in my marathon of baking was the PB&J cupcake. I cannot take credit for the idea of a PB& J cupcake, that must go to my friend Andrea. In fact, I'm not even really a fan of PB&J's so when she came over to taste my creation, I hadn't even tasted the completed cupcake. As she tried the first one, I began to tell her that I was thinking about tweaking the recipe again and she firmly stated, "DO NOT CHANGE A THING, THIS IS PERFECT!" Then she unwrapped another cupcake and shoved it at me for me to try, she was right, it was pretty darn good (and this coming from a non-pb&j'er). So the recipe is the same as it was and will always be!

Now for the frosting portion. Well the obvious choice is a peanut butter butter cream but I really felt that a dollop of jelly was necessary. The jelly flavor was the one thing that I stressed over the most, but when it came right down to it, everyone knows that Grape Jelly is Peanut Butters best friend, so a dollop of grape jelly and the PB&J is complete and tasty. (This one is also one of the hub's faves!).
